Simple Meal: The (I wish it were) Springtime Quinoa Bowl

If you can boil water and love delicious things, this week's bowl is for you. Raw vegetables in the form of carrot ribbons, shredded zucchini, thinly sliced radishes + cucumbers, and halved snow peas give you all the crunchy variety you could want in life. But we threw in some edamame and drizzled tahini dressing over the entire thing just in case. 

HINTS + TIPS

  • QUINOA (1 cup quinoa, 2 cups water. Bring to a boil and simmer, covered on med. heat for 15 minutes)
  • CARROTS (ribboned w/ a vegetable peeler) 
  • CUCUMBERS + RADISHES (thinly sliced)
  • YELLOW ZUCCHINI (grated)
  • SNOW PEAS (halved)
  • EDAMAME (boiled for 4 minutes)
  • TAHINI DRESSING ( 1/2 c. tahini + 1/3 cup lemon juice + 4T soy sauce)
